Rainbow Trout
Farmed in the U.S. for more than a century and throughout the world for hundreds of years, rainbow trout has long been a consumer favorite for its delicate meat and clean flavor.
U.S. trout farmers grow about 25,000 tons of rainbow trout annually. Idaho produces almost 80% of that number, although small rainbow trout farms are found in virtually every state.
Although in the wild, rainbows can weigh as much as 50 pounds, most farmed rainbows attain only 1-2 pounds. It generally takes about a year for them to reach that weight.

Cooking Tips
- Use mild ingredients so as not to overwhelm the trout’s delicate flavor.
- Prepare by poaching, pan-frying or sautéing.
- Trout can also be wrapped in leaves and grilled.
- The fish’s skin is edible, and offers an excellent contrast to the tender meat.
