Black Drum
This chunky fish is perhaps most noted for the “croaking” sound it makes using its air bladder. A mainstay of coastal restaurants, its firm, low-fat meat is a terrific substitute for catfish.
Black drum can reach weights exceeding 50 pounds and live for 40+ years. Over 1.3 million pounds of black drum are commercially harvested along the Texas coast every year.
