Alligator Sausage

Alligator entered Cajun cuisine thanks to early bayou trappers, who considered gators a versatile and tasty food source. Especially delicious is alligator sausage, a savory combination of lean alligator meat, pork, and Cajun spices and seasonings. It’s a perfect addition to jambalaya, soups and stews.
