Andouille

Pronounced “ahn-DOO-wee,” andouille is a classic Cajun smoked sausage. Made with pork butt, shank and a small amount of pork fat, andouille is seasoned with salt, cracked black pepper and garlic. Then it’s slowly smoked over pecan wood and sugar cane to give it both its distinctive dark color and flavor.


Andouille is used in a wide range of Louisiana dishes, including gumbo, jambalaya, red beans and rice, and étouffée. It can also be served as a breakfast sausage or even used as a pizza topping.
