Simply put, kippered herring are herring that been split open, soaked in a brine solution and then smoked. The word “kipper” has its origins in an Old English word that means “copper;” it was likely used to describe the coppery appearance of the smoked fish.
Since their introduction in the mid-19th century — the result of an accident, legend has it — kippered herring have become a favorite dish in the UK.
