Part of the sprawling flatfish family, petrale sole is closely related to the flounder. Caught in the waters off the West Coast, it is highly regarded for its sweet, delicate flavor.


Less than 5,000 tons of petrale sole are caught each year, making this a true gourmand’s fish. On average, petrale weigh about 2 pounds and produce 4-6 ounce fillets.

Availability
Petrale sole are caught year-round, but the heaviest landings usually come in January and February.


Cooking Tips

  • Like flounder and cod, petrale sole is a mild-tasting fish. Avoid using strong flavors in recipes.
