Shrimp Gratin with Asparagus
Step One: Preheat and Prep
Preheat your oven to 400°
Peel and devein your shrimp
Chop Green Onions, white and green parts
Place Asparagus on sheet pan - Drizzle with olive oil, salt and pepper
Slice demi baguette into 1/2 inch thick slices, arrange on baking sheet with Asparagus
Step Two: Get Cooking
Place bread crumbs and parmesan into a bowl. Melt two tablespoons of butter and add to bread crumb and parmesan mixture, season with salt and pepper.
In a larger mixing bowl, add shrimp, green onions, mushrooms, and garlic. Toss to combine, season with salt and pepper, then add half of the breadcrumb mixture and white wine. Mix completely.
Put in baking or casserole dish (8x8 or 9x11) Top with remaining breadcrumb mixture.
Bake on the lower rack for 16-20 minutes until the top is brown and the shrimp are cooked through.
Place Asparagus and Baguette on the top rack for 8-10 minutes.
