White and Green Bean Tuna Salad
Step One: Get Prepin
In a medium pot of boiling salted water, cook green beans until bright green and crisp-tender, about 3 minutes. Drain, rinse under cool water to stop the cooking, and pat dry. In the same water, turn heat down to simmer, and gently place the tuna in the simmering water for 10 minutes until it is firm and flakes easily. Remove tuna from poaching liquid, and flake with a fork.
While the tuna is poaching, in a large bowl, whisk together vinegar and oil and season to taste with salt and pepper.
Slice your red onion and pepperocini into thin slices. Open, drain and rinse the can of white beans.
Putting it all together:
Add green beans, cannellini beans, onion, tuna, and pepperoncini and stir to combine. Season with Salt and Pepper to taste. Serve immediately, or can be refrigerated up to two hours and served cold or at room temperature.
